I have had a yearning for shrimp since the first time I tasted them. They were hot, crispy and fried. Then I was introduced to shrimp cocktail and my appreciation increased. But it wasn’t until I had my first shrimp taco that my love affair started!

Tacos:
1 pound of 12-15 count raw shrimp deveined and tails off
1 tablespoon Joe’s Original BBQ Rub
1/4 cup oilve oil
1 lime, juiced
1 tablespoons Chili Ancho Powder
1 jalapeno, coarsely chopped
1/4 cup chopped fresh cilantro leaves
8 white corn tortillas

Garnish:
Shredded Cabbage

This is one of those recipes that really embodies true BBQ. Simple is always best and this slaw recipe has proven that for years. I just love it and it continues to win accolades with judges and more importantly friends and family.

Ingredients:
1 2lb bag of Cole Slaw Mix (or one head of cabbage and 2 carrots shredded)
1 Cup of Real Mayonnaise
1 Cup of Guilden’s Spicy Brown Mustard
1 small red onion (diced)
1 Cup of Golden Brown Sugar
2 Tablespoons of Balsamic Vinegar
2 Tablespoons of Joe’s Pork and Poultry Rub
1 Tablespoon of Ground Red Pepper

1 Bottle of Joe BBQ Chicken & Rib Rub
1 Bottle of Joe BBQ Original Barbecue Sauce
3/4 Cup light brown sugar
1 stick salted butter
Aluminum Foil

Many years ago I ate some Squash Rockefeller at a snazzy joint in Oklahoma City. The chef refused to give the recipe, so I made it my mission to not only create a recipe, but make one better!

Mission Accomplished…
It ain’t nothing for me to whip a fancy chef’s ass!

Ingredients:
4 large yellow squash
1/2 pound chopped frozen spinach
1/4 cup chopped green onions
1/4 cup sour cream
1/2 stick salted butter
1 teaspoon fresh garlic, finely chopped
